Today we caught up with Brandy Dyer, Director of Operations for Beyond Details, a young but already very influential catering and floral design company with offices here in Nashville and in Atlanta. Read on for more information on this innovative company. Beyond Details is sure to suit your wedding needs and make your event a memorable one! How did you get into catering?

Our first office opened in Atlanta 5 years ago. Since then we have acquired 2 new venues and opened our Nashville Office. We decided to come to Nashville because we loved the city, the people, the variety and the culture. Although, Atlanta is only 5 hours away the vibe and style of wedding are completely different. The brides have different visions and we absolutely love the change in dynamic.

What are some different options for catering that you offer brides?

Beyond Details offers unique catering choices for any of your special occasions. You can choose from an extravagant sit down dinner or a lavish buffet or try a more informal setting of heavy hors d'oeuvres for the more social party. All choices are delicious and always prepared fresh; your options are endless.

What are some things that you are working on for 2013?

2013 is going to be a very exciting year for us. We have just launched the opening of our second Atlanta venue - The Mill at Yellow River. We are beginning our second year in Nashville, with growth faster than we anticipated. We are also working on offering a large inventory of props and furniture in a plethora of styles from modern to vintage to maximize the overall vision for each client’s event.

What catering trends do you wish would die?

Chocolate fountains, champagne fountains, salad martini stations, and fruit and cheese trays are a thing of the past. As much as we once loved them, it is time that we let them rest in peace. They have been replaced with smores stations, mason jar salads, biscuit stations and fun dessert stations displayed in an array of cute cocktail glasses.

What are you seeing popular in catering in 2013?

We will see favors in the form of Canning next year. Brides and families will look for new ways to get locally grown food items and can them for their guests. Canning is a cost effective gift for guests and helps support the farm to table concept which will also remain popular. Ice cream trucks will also be a new wave which gives guests a wide variety of dessert options to go along with late night food trucks.
